Data retention
How long submissions are kept, and how to keep less.
Submissions older than the retention period are deleted permanently, attachments included. It runs daily. Notification emails already sitting in your inbox are yours and are not touched.
What you can set

It is per-form, under the form's Advanced tab, so a job application form can hold three years while a newsletter signup holds thirty days.
Why shorten it
Data minimisation under GDPR and CCPA: you should not be sitting on personal data you no longer need. Setting a period that matches what you actually do with submissions is the simplest way to comply, and it is one setting rather than a policy nobody follows.
Deletion is permanent and there is no undo. Export first if you might want the data — a shortened period applies to submissions you already have, not just new ones.
